I had decided I was going to make Kahlua marshmallows. We had a lot of alcohol left over from our wedding, so I’ve been trying to work it into holiday desserts. Strawberry Bail Ice Pops

I posted these strawberry basil ice pops to my Instagram over Memorial Day Weekend, and I realized I never added the recipe to my blog. These are a delicious, easy treat perfect for any time of the year! Strawberry and basil are classic flavors, and honestly they complement each other so well. It’s an odd combination for some, but please give these a try. Let me know what you think in the comments!

Strawberry Basil Ice Pops

Total Time: 10-15 minutes
         Prep Time: 10-15 minutes
         Inactive Time: 2-4 hours
Shelf Life: 1 month in an airtight container in the freezer

5 cups fresh strawberries, chopped
3 tsp honey
3 tsp lemon juice
1/4 - 1/3 cup basil, chopped (use less for a more subtle basil flavor)
pinch of kosher salt

1. Add all ingredients into a blender and puree until smooth
2. Pour into ice pop molds and freeze for 2-4 hours. If you don't have molds, you can use small plastic or paper cups
3. To remove, run under warm water until loose enough to pull out of the mold. eat immediately, or wrap in wax paper and freeze again
